Turkey, etc.

My favorite way to cook for my family is a gigantic piece of cheap meat. Last week it was turkey. I've also done beef or pork roasts or a big batch of meatballs.
Let's look at how we used that turkey.

Day 1
Stuff and roast the turkey and serve with mashed potatoes and carrots.

Day 2
Turkey sandwiches for lunch.

Day 3
Turkey with a fennel sauce poured over noodles.

Day 4
Turkey salad sandwiches.

Day 5 
Turkey noodle soup.

Make a broth out of the bones to use in each of the dishes for maximum flavor.
Use any leftovers in a stir-fry or bean soup or serve with eggs for breakfast.

Here's the recipe for my fennel sauce turkey. It's delicious! 

Prepare your ingredients:
1 fennel bulb sliced into half moons
1 medium onion sliced into half moons
1 small leek sliced into half moons
3-4 garlic cloves, rough chopped
2 cupped diced or shredded turkey (can substitute with chicken)
1/4 fennel fronds, rough chopped
1 lemon sliced in half
Salt and pepper to taste
1/4 cup flour
1 cup turkey broth (can substitute with chicken broth)
1 jar alfredo sauce
Carmelize the onions in a skillet with some olive oil over medium heat.
Add the leeks, fennel bulb, and garlic.
Once that cooks down add in the turkey. Cook until turkey is warmed through.
Sprinkle the flour over everything and mix in. Add the 1/2 the turkey broth and mix until combined.
Add in the alfredo sauce and mix.
Squeeze in the juice from half a lemon.
Mix in most of the fennel fronds and, optionally, some fresh chopped garlic for an extra garlic punchy flavor.
Serve over mashed potatoes or noodles or rice. Garnish with fresh cracked black pepper and additional fennel fronds.

Serves 4. Cooked in about 30 minutes.
